WHere is a simplified interpretation of a drink from a new cocktail list. Designed as a party-sized pre-mixed that's loaded with essence associated with holiday season, which makes it perfect for a celebration. Reserve the remaining syrup for morning drinks, desserts, or to make another batch of the drink.

Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Put all the ingredients inside a pot, bring to a simmer, mixing to dissolve. Then, remove from the stove and leave to reach room temperature fully. Decant into a clean bottle, close it keeping it chilled, where it will keep for up to four weeks.
For the Cocktail Base: Pour all the liquid ingredients into a large bottle, let it rest for an hour, then pass it through , ideally through muslin, to ensure it's completely strained.
When ready to serve: Add 85ml of the cocktail base to a mixing glass containing ice, and stir carefully for about 60 seconds to cool it down. Strain into a frosted cocktail glass or similar, top with the cranberries and complete it with a light spray of mandarin oil above the glass.
